  1. Waffle Wednesday: Cinnamon Waffle with Homemade Apple Sauce

    Waffle Wednesday is here again! It has become my favorite day of the week. Today I bring you a cinnamon waffle with applesauce made form scratch. I love applesauce so much, sometimes I even put it on my toast!

    Yields 1 Serving
    Ingredients:
    Waffle:
    1 3/4 C Flour
    1 Tsp. Baking Soda
    1/2 Tsp Salt
    2 C Milk (I used almond milk)
    1/3 C Veggie Oil
    2 Eggs
    2 Tbsp Brown Sugar
    1 Tbsp Cinnamon

    Applesauce:
    6 Large Apples
    1/4 Cup Sugar (you can add more if you like your applesauce sweeter)
    2 Tsp Lemon Juice
    1/2 Tsp Cinnamon

    Method:
    For the waffle, combine all ingredients and mix well making sure not to have any lumps. Pour into the waffle iron. Easy peasy. As you can probably tell, I’ve been using the same base recipe for the waffle and adding different ingredients to create different variations.
    For the applesauce, remove the skin and core and quarter apples. Be sure to remove all seeds. I used one of those apple cutters from Ikea for mine. It really cut down on the chopping time! Place your apples in a large saucepan filled with about an inch or two of filtered water. If your apples are more or less ripe, this will alter your cooking time. You need the apples to be very soft. If your apples are ripe, you’ll only need to simmer them for about 10 minutes and you can add time if they are less ripe. You shouldn’t need to simmer them for more than 20 to 25 minutes. Remove from the pan and let them cool. Place in a blender or food processor to get rid of any large bits then add the lemon juice, sugar, and cinnamon. I add my ingredients in stages so that the sauce doesn’t come out too sweet or sour. You can add each ingredient little by little until you find a taste that’s just right!

  2. Waffle Wednesday: Chocolate Chip with Strawberry Honey Butter

    Heat up your waffle iron and get ready because today’s Wednesday Waffle contains two of my most favorite things. Dark chocolate and strawberries!!

    Yields 1 Serving
    Ingredients:
    Waffle:
    1 3/4 C Flour
    1 Tsp. Baking Soda
    1/2 Tsp Salt
    2 C Milk (I used almond milk)
    1/3 C Veggie Oil
    2 eggs
    1 Tbsp sugar
    1 C Chopped Dark Chocolate (Chocolate Chips work too, I just love dark chocolate)

    Syrup:
    1/4 C Butter
    2 Tbsp Honey
    1 C Sliced Strawberries

    Method:
    For the waffle, combine all ingredients except the dark chocolate and mix well making sure not to have any lumps. Add the dark chocolate and pour into the waffle iron. Pretty simple, right?
    For the syrup, place the butter in a skillet over low heat. This is important, you never want the butter to boil or even simmer, at first you just want it to melt. Once melted add the honey and bring to a LOW simmer. Add the strawberries and simmer for about 5 to 10 minutes. Be sure to stir the mixture often.
    You will know it’s ready when the strawberries are soft, the honey butter is now a cute shade of pink, and the sauce has become thicker.

    Pour your mixture over the waffle and enjoy!! I added a little bit of powdered sugar because I’m a sweets monster but this is optional.

  3. Waffle Wednesday: Coconut Waffle with Chocolate Sauce

    So, I got a waffle maker and I’m super excited about it which brings us to March’s monthly feature WAFFLE WEDNESDAY. Can you tell I’m excited to eat waffles? The first waffle I made is a coconut waffle with a chocolate sauce that is basically a melty version of a ganache. SO GOOD.

    Ingredients:
    Waffle:
    1 3/4 C Flour
    1 Tsp. Baking Soda
    1/2 Tsp Salt
    2 C Milk (I used almond milk)
    1/3 C Veggie Oil
    2 eggs
    1 Tbsp sugar
    2 C Shredded Coconut
    1 Tsp Cinnamon
    Chocolate Sauce:
    1 C Chocolate Chips
    1 C Milk
    2 Tbsp Butter
    pinch of salt

    Method:
    Preheat your waffle iron. For the waffle, mix together the first 7 ingredients until well combined and there are no lumps. Sifting the flour first will make this much easier. Add the coconut and cinnamon. Put it in the waffle iron. (Duh).
    For the Chocolate Sauce, put chocolate chips and butter into a saucepan on low heat until they start to melt together. Then slowly add the milk while constantly whisking until you have a nice creamy sauce.
    Sprinkle some coconut on top and enjoy!
